Strawberry Hibiscus Soda

Make your summer sparkle with this deliciously effervescent Strawberry Hibiscus Soda! Tart and fruity, floral and fragrant – Bring this soda to every summer gathering!

Ingredients

  • 1 ½ cups sliced Strawberries
  • 1 ¾ cup Dried hibiscus flowers
  • 2 cups Granulated sugar
  • 2 cups Water
  • Splash of vanilla extract
  • Seltzer
  • Ice

Instructions

Make the syrup:

  • Puree the strawberries in a blender over high speed. In a medium saucepan, combine strawberry puree, dried hibiscus flowers, granulated sugar, water, and vanilla extract. Bring to a boil over medium/high heat. Reduce the heat to very low and simmer the mixture until deeply red, about 10 minutes or so. Do not simmer longer, otherwise the sugar will caramelize and muddle the fruity floral flavors.
  • Remove from heat and allow mixture to come to room temperature. Strain the hibiscus flowers through a fine mesh sieve, over a glass jar or container with a tightly sealed lid, pressing on the solids to extract as much syrup as possible. Store in the fridge until ready to use.

Make the Strawberry Hibiscus Soda:

  • To a tall glass, add a few tablespoons of strawberry hibiscus syrup. Top with seltzer and ice. Stir to combine.
