Very Berry Blueberry Mini Pies
A buttery, flaky crust hides succulent blueberries with strawberry syrup, lemon zest, and vanilla bean. The best part? It's mini, so there's less guilt!
For the pie crust
- 2 cups All-purpose flour spooned then leveled
- 2½ tablespoons Granulated sugar
- 1 teaspoon Salt
- 1 cup 2 sticks Unsalted butter, cold and cut into cubes
- 1 Large egg
- 2 tablespoons Whole milk
- 1 large egg beaten (for brushing the dough)
- Granulated sugar for sprinkling optional
For the mini pies
- 1 dry pint Blueberries
- 1 cup sliced in half Strawberries
- 3 tablespoons Granulated sugar
- Zest of 1 lemon
- 1 1/2 teaspoons Vanilla bean paste
- Vanilla ice cream
