Very Berry Blueberry Mini Pies

A buttery, flaky crust hides succulent blueberries with strawberry syrup, lemon zest, and vanilla bean. The best part? It's mini, so there's less guilt!

Ingredients

For the pie crust

  • 2 cups All-purpose flour spooned then leveled
  • tablespoons Granulated sugar
  • 1 teaspoon Salt
  • 1 cup 2 sticks Unsalted butter, cold and cut into cubes
  • 1 Large egg
  • 2 tablespoons Whole milk
  • 1 large egg beaten (for brushing the dough)
  • Granulated sugar for sprinkling optional

For the mini pies

  • 1 dry pint Blueberries
  • 1 cup sliced in half Strawberries
  • 3 tablespoons Granulated sugar
  • Zest of 1 lemon
  • 1 1/2 teaspoons Vanilla bean paste
  • Vanilla ice cream
