Blueberry Coconut Pancakes

These gorgeous Blueberry Coconut Pancakes are packed with fresh blueberries and coconut flakes, then topped with a blueberry lemon sauce that will knock your socks off!

Ingredients

For the blueberry lemon sauce

  • 1 cup Granulated sugar
  • 1 cup Water
  • 2 tablespoons Cornstarch
  • 1 pint Blueberries
  • Zest of two lemons
  • 1 tablespoon Vanilla bean paste
  • 1 tablespoon Unsalted butter

For the blueberry coconut pancakes

  • cups All-purpose flour spooned then leveled
  • 2 tablespoons Coconut sugar
  • teaspoons Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • cups Buttermilk plus additional if batter is too thick
  • 2 tablespoons Coconut oil melted
  • 1 Egg lightly beaten
  • 1 1/2 cups Blueberries lightly mashed
  • 1/4 - 1/3 cup Sweetened coconut flakes
