Blueberry Coconut Pancakes
These gorgeous Blueberry Coconut Pancakes are packed with fresh blueberries and coconut flakes, then topped with a blueberry lemon sauce that will knock your socks off!
For the blueberry lemon sauce
- 1 cup Granulated sugar
- 1 cup Water
- 2 tablespoons Cornstarch
- 1 pint Blueberries
- Zest of two lemons
- 1 tablespoon Vanilla bean paste
- 1 tablespoon Unsalted butter
For the blueberry coconut pancakes
- 1¼ cups All-purpose flour spooned then leveled
- 2 tablespoons Coconut sugar
- 1½ teaspoons Baking powder
- ½ teaspoon Baking soda
- ½ teaspoon Salt
- 1½ cups Buttermilk plus additional if batter is too thick
- 2 tablespoons Coconut oil melted
- 1 Egg lightly beaten
- 1 1/2 cups Blueberries lightly mashed
- 1/4 - 1/3 cup Sweetened coconut flakes
