Ingredients

Beet simple syrup

  • 1 heaping cup chopped beets
  • 1 cup water
  • 1 cup granulated sugar

For the cocktail

  • 5-6 blackberries
  • 1 ounce 2 tablespoons fresh lime juice
  • half a lime sliced in half
  • 1 ounce 2 tablespoons beet simple syrup
  • 2 ounces 1/4 cup reposado tequila
  • 2-3 ice cubes
  • 1.5 ounce 3 tablespoons chilled club soda
  • 1 lime wedge for garnish
  • 1 blackberry for garnish

  • In a small saucepan, combine beets, water, and sugar. Bring to a boil over high heat, then reduce the heat to low and allow to simmer until the beets have shrunk and the
  • syrup is a deep red. Remove from heat and allow to steep for about 40 minutes. Strain into a glass jar with a tight fitting lid. Makes about 1 1/2 cups of simple syrup, enough for several cocktails.
