In a medium saucepan, combine ginger, sugar, and water. Bring to a boil over high heat. Reduce the heat to very low and allow to simmer until
the ginger is somewhat translucent and the syrup is a yellow color, about 30 minutes. Turn off the heat and allow the ginger to steep for about an hour. Strain and either discard
the ginger or save it for another use. If saving for another use, make sure you peel the skin off the ginger. I just like the color of the syrup imparted by the skin.Place the simple
syrup in a glass jar with a tight fitting lid and store in the refrigerator until ready to use. Makes a little less than 3 cups of sumple syrup.
