Humans, it is summer. Well… Almost. You know what I mean. The weather is warm, we’re out enjoying the summer-like breeze.
Are we, though?
Are we really reveling in all that is summer? I dunno. My social media feeds are jam-packed with people taking pics with the new Snapchat filter instead.
What is wrong with this, um… picture?
Why aren’t we enjoying each other’s company? Why are we sitting together and more detached than ever?
How has social media usurped good old-fashioned interaction? Good old fashioned laughter. Our feeds are instead crammed with frozen staged laughter that dissipates the second social media uploads fail to obtain enough likes.
We are miles apart seated right next to one another.
Can we make it a point to interact more this summer?
No phones.
No filters.
More laughter, the real kind. The kind that makes your belly hurt.
Can we have more picnics in the park?

How to make Classic Mojito Pops
All the flavors of a mojito – Mint simple syrup, lime juice, and rum frozen inside a pouch. You can go heavy or light on the booze. Your choice.
Roll up to the picnic, barbecue, or beach with a cooler full of these. Check your phones at the door. Bury it in the sand. Lock it up.
Make some memories.
Real ones.
Classic Mojito Pops
Ingredients
For the mojito simple syrup
- ½ cup heaping Fresh mint
- 1 ½ cup Water
- 1 cup Granulated sugar
- Splash of vanilla extract
Mojito pops
- 1 ½ - 1 ¾ cup Mint simple syrup
- ¾ cup (6 oz) Lime juice
- ¾ - 1 cup Light or dark rum
- 1 ¼ cup Cold seltzer or club soda
- 1/3 cup Fresh mint cut into strips
Instructions
Make the simple syrup:
- Blend the mint and water in a blender on high speed until combined. Pour the mint/water mixture in a small saucepan with the granulated sugar and vanilla extract. Bring the mixture to a boil over medium/high speed. Reduce the heat to low and simmer the mixture for 5-7 minutes until the mixture takes on a light syrupy texture. Do not simmer longer than this; otherwise the sugar will caramelize and change the flavor of the simple syrup.
- Remove from heat and allow to cool completely. Strain the mixture into a large measuring cup with a lip (this will make the pouches easier to fill) and measure out 1 ½ - 1 ¾ cups. Discard the mint leaves.
Make the mojito pops:
- To the large measuring cup, add the mint simple syrup, lime juice, rum, seltzer (or club soda) and mint. Mix to combine. Taste and adjust the mint simple syrup and rum as needed. Please note, adding more rum will prevent the pops from freezing, instead turning it into a slush (which is fine).
- Place each ice pop pouch inside a large glass. Open the ice pop pouch and carefully fill each pouch to the fill line. Do not fill to the top, as the mixture expands as if freezes. Seal the pouches and place in the freezer for 5-6 hours or overnight.
- Makes about 9 pops
