Mosquitoes and I we were sort of cool. You know, live and let live. You bite me once, ok – I can deal. Twice, even three times. You’re a mosquito. Your form is your function. I can dig it. I break out the anti-itch cream.
But you see, a few days ago as I slept, no less – A mosquito bit me. Not once, not twice – But 5 times.

And that made me want to go Rambo on a mother******. I was minding my own DAMN business, dreaming of The Walking Dead premier and hoping I know what Daryl Dixon looks like after finally taking a shower when I wake up scratching my hand like a maniac. And the itching would not stop. It kept me awake. And I like my sleeps, yo! Now, you guys know what it’s like to be bitten by a mosquito. It itches like a mofo.
Try being bitten in 5 different places on the one hand. It burns. And lack of sleep makes me stabby. Yah. Rambo. I almost went Rambo. Red bandana and everything. Mosquitoes are crafty, calculating lil suckas. Like tiny little itch carrying missiles. Inconsiderate lil’ mofos. I haven’t been able to catch him yet. Needless to say we ain’t cool no mo’.
Now flow with me – We’re about to go in on some Banana French Toast Sticks.
I dig bananas real hard. Ripe bananas are my favorite. Sometimes they get TOO ripe to eat. Instead of throwing them away I dream up recipes that far extend the old banana bread standby. And so these Banana French Toast Sticks were born.
I’ve been hoarding this recipe for about two years. It wasn’t ready. I kept forgetting, I kept using the wrong bread. Banana French Toast Sticks needed a certain sort of bread to pull it off. Something a little thick to help soak up the banana laced, heavily spiced French Toast mix situation. One morning I woke up and baked a couple loaves of challah bread. Challah is thick and porous, like a sponge made of buttery rich dough. The perfect spongy vehicle to help elevate this situation.
I thought it would be fun to cut these up and make sticks. The process is the same as making French toast. Dip thick slices of bread in the mixture and fry on both sides. Cut them into sticks. And what are edible sticks without a dipping sauce, amiright? The dipping sauce is a simple cooked sauce with butter, brown sugar, condensed milk, heavy cream, and mashed bananas. It’s a breeze to make. You’re going to want to double it. Real talk.
Banana French Toast Sticks are an indulgent breakfast situation. You don’t want to eat these every day. They’re more of a weekend thing, a bargaining chip, or as reward for ridding your life of a damn bloodsucking, no bite etiquette having, and inconsiderate mosquito situation.
For the banana dipping sauce
- 4 tablespoons Unsalted butter
- ½ cup Light brown sugar
- ½ cup Condensed milk
- 1 Mashed ripe banana small
- 1 teaspoon Vanilla extract
- ½ cup Heavy cream
For the Banana French Toast Sticks
- 1/2 cup Whole milk
- 2 tablespoons Granulated sugar
- ½ teaspoon Ground cinnamon
- ¼ teaspoon Ground cloves
- ¼ teaspoon Ground cinnamon
- ¼ teaspoon Freshly grated nutmeg
- 2 Large ripe bananas
- 2 tablespoons plus more for the griddle Unsalted butter
- 2 large Eggs
- 8 thick slices Challah bread
