Mango infused vodka, limes, ice cream, seltzer, and a spoon. Need I say more?
We are about 2 weeks from the start of the school year here in NYC. In my world it means I am milliseconds away from pulling up a pair of knee high boots and sashaying my ass first to drop off my Moonbug at school, then to work in cooler weather.
There are many of us holding onto summer with a Kung Fu Grip, hoping to squeeze the most out of summer like a pair of too tight jeans. I hear you, boo. As much as I love fall I find there are never enough summer days to enjoy. I want to say it’s all right. I want to say there will be more summer days to enjoy.
But no. I don’t feel that way. I feel like I’m two weeks away from a wasted summer. Yes, I did a bunch of stuff. Yes, I had fun. But I’m a selfish little bitch. I wanted more. And now it’s winding down. I’m looking at my vast collection of fall boots, not with excitement – But with a feeling that seems more resigned than anything. Meh, perhaps it’s Polar Vortex PTSD. I hate long winter months, the early nights, and all the damn snow. Perhaps I should just stop and enjoy all the seasons. But I’m a selfish little bitch who wants to stop time right here, right now, for 6 months.
Float with me… It’s time to put vodka inside a glass, add some ice cream, and top that situation with seltzer.
Early this summer I infused vodka with mango. Lots of vodka with mango. Everywhere people gathered, I walked in with my vodka like, whaaaaa?! Infused vodka is a conversation starter. Sweet, boozy, and reminiscent of a tropical island vacation – This is what everyone needed this summer and I was about that life.
Then I took it a step further. Because I wouldn’t be me otherwise. I turned it into a Mango Lime Vodka Ice Cream Float that will knock those summer wedges off and mysteriously pull down that strapless top you insist on wearing. I love the combination of mango and limes due to the sweet and tart of it all. The tropical feel of it all.
I muddled some limes with a bit of sugar. Then I added a serious dose of mango infused vodka; about two ounces. If you’re about the lush life, add more. I don’t judge. I’ve been there. Then I added so much ice cream it’s a miracle I was able to top that situation with seltzer. But I did. And I went in. All in. No shame in my game, boo. I had two of these in one afternoon. Lush status in full effect.
And now I’m urging you guys to do the same. Because nothing beats a vodka infusion with mangoes and a simple syrup. Because nothing, nothing beats a boozy ice cream float. Buy some mangoes and break open that bottle of vodka. Get your infusion on today, and your float on this Friday. Just do it.
Summer may be thisclose to ending. But a Mango Lime Vodka Ice Cream Float will carry us through.
- 2 ounces Mango infused vodka
- 1 Lime quartered
- 1 tablespoon Granulated sugar
- Vanilla ice cream
- Add quartered lime to a tall glass (over 8 ounces). Pour sugar over the limes and muddle with a muddler or back of a wooden
- spoon until the lime juice is released and fragrant. Pour mango infused vodka mix briefly to combine. Add as many scoops of ice cream as you can fit into the glass. Pour seltzer in a slow and steady stream on the edge of the glass till you top that sucka.
- Grab a spoon and enjoy this boozy situation.
