A month ago I happily joined a Facebook group post situation hosted by Courtney from Neighborfood and Nancy of Gotta Get Baked. These awesome ladies, along with a slew of other awesome ladies came together to celebrate Galentine’s Day – A totally made up holiday, yet real in the hearts of those who love the show Parks and Recreation.

As explained by Leslie Knope  “Oh, only the best day of the year.  Every February 13th my lady friends and I leave our husbands and boyfriends at home and we just come and kick it breakfast style. Ladies celebrating ladies.  It’s like Lilith Fair, minus the angst. Plus frittatas.”

So myself, along with  a group of fantastic bloggers have joined forces to bring you our own Galentine’s Day situation centered around a woman who inspires us. And of course, there’s food.

When it comes to a woman who inspires me I look no further than my momma. I can talk about how raised 2 children as a single parent. I can talk about how my mom was the backbone of her family before she started one of her own. I can talk about how her freight train attitude got the job, any job done. I can say she is one of the strongest women I know. The reasons are endless.

I’m not sure when it happened; perhaps when my son was merely months old, but my mom became one of my best friends. In fact, she’s my best friend, my sounding board, my consigliere. She is full of old school wisdom, which surprisingly works in this fast paced modern culture. I’m not sure how she swings it, but the woman has all the answers. Every answer. Every single time. She’s like a short Dominican guru. From removing stains to raising children, that woman knows it all.

And she’s my favorite person in the world.

I can hang with my mama all day and still call to speak to her for another 3 hours. We rehash events, gossip about family (yup, we do!), and cackle like two old ladies. It never gets old.

 And so to honor my mama on Galentine’s Day I thought I’d make her a red wine ice cream float. Because she loves booze and dessert just as much as I do.

These red wine ice cream floats are crazy simple to make and boast only 3 ingredients. Yes, 3! Maraschino cherries, vanilla ice cream, and sparkling red wine. Don’t have sparkling red wine? Add seltzer to red wine. Make it sparkle, boo. This comes together like any other float. Muddle some maraschino cherries on the bottom of a glass, add vanilla ice cream, followed by a few more cherries, then top with sparkling wine.

I can’t wait. She’s coming over this afternoon  to do what we do best – Down a few of these floats, laugh like crazy, engage in good conversation interspersed with song.

Yeah, we sing too.

Ingredients

  • Marachino cherries
  • 1 pint Vanilla ice cream
  • Sparkling red wine*

Instructions

  • Optional - Line an aluminum loaf pan or small cookie sheet with parchment paper and set aside. With an ice cream scoop, scoop vanilla ice cream into the loaf pan or cookie sheet.Place the pan in the freezer to set about 20 minutes.
  • To prepare the ice cream float:
  • To a tall glass add about 4 maraschino cherries and muddle with a muddler or handle of a wooden spoon. To the muddled cherries add a scoop or two of ice cream. Add about 4 more cherries and top with a couple more scoops of ice cream. Top with sparkling red wine.
  • *Note: If you can't find sparkling red wine (or don't wish to leave the house), make your own. To about 3/4 cup (6 ounces) of red wine add about 1/4 cup (2 ounces) of seltzer. Feel free to play with those ratios. Want it more bubbly? Add more seltzer? Love more booze? Go.For.It.
