I thought about of that man’s comment for years – And yes – The 60’s stunted Jimi Hendrix creatively. Unable to funnel the endless creativity fueled by drugs from his brain to a limited instrument like a 1960’s guitar frustrated him to death. I believe that. His death was a great loss to music.

As I approach my 39th (holy shit I’m turning 39!!!) year of life I wonder – Am I living a life that’s creatively stunted? Am I living fully? We live in an age where we are full of information, where there seems to be no end to how far we will come, at least in the technical sense.
And yet, I wonder… Am I STILL living a life that’s is devoid of the creativity bubbling in my brain? Am I living the life I envisioned all those years ago? Is the world ready for me?
I’m not so sure.

Anyway, while I ponder the plight of reaching middle age, and what looks to be the beginning of a mid-life crisis – Have a strawberry popsicle, homie.
‘Tis the season for strawberry, folks. I buy way, waaaay too many strawberries. I am not ashamed to admit it. You probably do too. Their shelf life is short, so before I’m left with icky fuzziness, I use strawberries any which way I can. Smoothies, jams, soda syrups, in vodka (yay!) – You name it, there’s a strawberry in there somewhere.

And now, popsicles. These Strawberry popsicles start with a strawberry puree that’s cooked down with sugar, water, and a splash of vanilla extract. A little gelatin is added for the slow melt factor. If you’re vegetarian or vegan you can go ahead and omit it. Personally I like to enjoy my popsicles as long as possible, hence the gelatin. But you do you, boo.

I can’t believe it’s taken me this long to make these strawberry popsicles. They burst with the scent of summer, resplendent in the flavor of this truly wondrous season. Perfect for pondering your life situation or devising a plan to make the second half of your life truly count.

Strawberry Popsicles

Five ingredients and happiness in your heart is all you need to make these flavor-packed strawberrylicious summer popsicles!
Servings: 8

Ingredients

  • 1 ¾ pounds Strawberries
  • 2 cups Water
  • ½ cup Granulated sugar
  • Splash of vanilla extract
  • 1 teaspoon Powdered unflavored gelatin I used Knox

Instructions

  • To a blender, add the strawberries, water, granulated sugar, and vanilla extract. Blend on high until pureed. You can pulse if you prefer strawberry chunks in your popsicles.
  • In a medium saucepan, combine the puree and bring to a boil over medium heat. Be careful to watch it, as it can easily boil over. Reduce the heat to low and add the gelatin. Stir until dissolved.
  • Remove mixture from heat and allow to cool slightly. Pour into popsicle molds and place in the freezer until frozen.

To unmold:

  • Run the popsicles under hot water for a few seconds and gently remove from popsicle mold.
